The Director of Food & Beverage is a strategic and operational leader responsible for the overall direction, profitability, guest satisfaction, and brand positioning of all food and beverage operations within a large luxury Caribbean resort. This role oversees a diverse portfolio of restaurants, bars, lounges, pool and beach operations, in-room dining, banquet and catering services, culinary partnerships, and resort-wide activation programming.The ideal candidate is an innovative hospitality executive with a proven track record of leading complex, multi-outlet luxury resort environments while driving exceptional financial performance, elevated guest experiences, and strong team engagement. The Director of Food & Beverage will lead a large team of managers, supervisors, and hourly colleagues while serving as a key member of the resort executive leadership team.
Key ResponsibilitiesStrategic Leadership & Resort PositioningDevelop and execute the overall Food & Beverage strategy aligned with resort business objectives and luxury brand standards.Drive innovation across all outlets through concept development, menu strategy, culinary partnerships, beverage programming, and experiential dining initiatives.Collaborate with Marketing, Revenue Management, Sales, and Resort Operations to position the resort as a leading food and beverage destination in the Caribbean.Identify emerging industry trends and implement best practices that enhance revenue, profitability, and guest engagement.Lead annual business planning, budgeting, forecasting, and capital expenditure initiatives.
Multi-Outlet Food & Beverage OperationsProvide direct oversight for:10+ restaurants and dining venuesPool bars and beach barsLobby bars and loungesIn-room dining operationsSpecialty dining experiencesBeach and cabana food serviceGrab-and-go and retail food offeringsSeasonal and pop-up activationsResponsibilities include:Maintaining exceptional service standards and operational consistency.Ensuring outlet profitability and labor efficiency.Driving average check growth and revenue optimization.Monitoring quality assurance, sanitation, and food safety compliance.Creating memorable luxury guest experiences across all touchpoints.
Resort Activation & ProgrammingLead the development and execution of vibrant poolside, beachfront, and resort-wide food and beverage programming.Create unique experiences that drive guest participation, incremental revenue, and social media engagement.Oversee programming such as:Pool parties and themed eventsSunset cocktail experiencesBeach dining activationsCulinary festivalsWine and spirit tastingsCelebrity chef eventsHoliday programmingLive entertainment partnershipsWellness and lifestyle activationsCollaborate with Entertainment, Recreation, and Marketing teams to create year-round programming calendars.
Banquets, Catering & EventsProvide strategic leadership for a large-scale banquet and catering operation serving weddings, corporate groups, incentive programs, galas, and social events.Partner closely with Sales and Conference Services to maximize event revenue opportunities.Ensure flawless execution of events ranging from intimate VIP functions to large-scale resort buyouts.Monitor banquet profitability, menu engineering, staffing models, and operational efficiency.Lead pre-convention planning and operational reviews for key events.
Financial Performance & Revenue GenerationAchieve annual revenue, GOP, flow-through, and profitability targets.Analyze outlet performance and implement revenue-enhancing initiatives.Manage:Labor productivityFood cost controlsBeverage cost controlsInventory managementProcurement strategiesForecasting and budgetingDevelop pricing strategies and menu engineering programs to maximize profitability.Identify new revenue streams and experiential offerings.
People Leadership & Talent DevelopmentLead, mentor, and inspire a large and diverse food and beverage team consisting of department heads, outlet managers, chefs, supervisors, and hourly colleagues.Foster a culture of accountability, collaboration, and service excellence.Develop succession plans for key leadership positions.Conduct performance evaluations and leadership development initiatives.Recruit and retain top hospitality talent.Promote colleague engagement and a positive workplace culture.
Guest Experience & Service ExcellenceChampion Forbes-level luxury service standards throughout all food and beverage operations.Monitor guest satisfaction metrics and implement continuous improvement initiatives.Actively engage with VIP guests, ownership representatives, and key stakeholders.Ensure all outlets consistently deliver exceptional food quality, beverage execution, ambiance, and personalized service.
Compliance & Risk ManagementEnsure compliance with all health, safety, sanitation, and liquor licensing requirements.Maintain HACCP, food safety, and responsible alcohol service standards.Oversee emergency preparedness and risk mitigation procedures within food and beverage operations.Ensure adherence to company policies, brand standards, and local regulations.
QualificationsRequiredBachelor's degree in Hospitality Management, Business Administration, Culinary Management, or related field.Minimum 10 years of progressive Food & Beverage leadership experience.Minimum 5 years leading large luxury resort or destination resort food and beverage operations.Experience managing:10+ outletsMultiple bars and loungesIn-room diningLarge banquet and catering operationsResort activation programmingDemonstrated success managing revenues exceeding $20M+ annually.Strong financial acumen with expertise in budgeting, forecasting, labor management, and profit optimization.Proven experience leading large teams of managers and hourly associates.PreferredLuxury Caribbean, island, or international resort experience.Forbes Travel Guide, AAA Four Diamond, or upscale/luxury brand experience.Multi-lingual capabilities (English and Spanish preferred).Experience with lifestyle, destination, and experiential hospitality concepts.

Compensation:$115,000-$145,000
